You will need:
- 25ml Merser White
- 25ml Merser Signature
- 15ml overproof rum
- 25ml lime juice
- 100ml pineapple juice
- bar spoon of grenadine
- dash of bitters
- Garnish: Absinthe spray, mint and maraschino cherry
SHAKE all ingredients apart from the bitters, together with plenty of ice. Strain into a chilled hi-ball glass, filled with ice and spray over the top of the drink with absinthe, add the dash of bitters and garnish.
